I april 2022 var jeg p\u00e5 en firedagers egotripp til Provence med et fullstappet program av restaurantbookinger. Egentlig hadde jeg ikke tenkt til \u00e5 skrive om gamle restaurantbes\u00f8k, der jeg husker for lite av til \u00e5 si noe konstruktivt om maten. Jeg har imidlertid bestemt meg for \u00e5 gj\u00f8re ett unntak, der jeg velger \u00e5 ha fokuset vel s\u00e5 mye p\u00e5 historien som selve m\u00e5ltidet.<\/p>\n\n\n\n
Ett av stedene jeg svippet innom for en lunch var l’Oustau de Baumani\u00e8re i Les Baux-de-Provence. Det var ikke turens sterkeste m\u00e5ltid, for den prisen g\u00e5r definitivt til AM par Alexandre Mazzia. Men l’Oustau de Baumani\u00e8re har en unik historie som jeg tenker det kan v\u00e6re verdt \u00e5 skrive noen ord om.<\/p>\n\n\n\n
Historien om l’Oustau de Baumani\u00e8re starter med Raymond Thuilier i 1946. I 1946 var Thuilier en suksessrik forretningsmann med juristutdanning fra Lyon og bosatt i Paris. Som yrkesaktiv har han etablert seg noe formue fra hans virke innen forsikring. Thuilier var godt voksen, faktisk hele 51 \u00e5r gammel, da han bestemte seg for \u00e5 legge forsikringskarrieren p\u00e5 hylla for \u00e5 forf\u00f8lge en gammel dr\u00f8m han hadde b\u00e5ret p\u00e5 siden ungdoms\u00e5rene. Thuilier kj\u00f8pte seg en nedlagt falleferdig g\u00e5rd i Les Baux-de-Provence, og satt i gang med n\u00f8dvendige rehabiliteringsarbeider av bygningsmassen for \u00e5 kunne starte sin gourmetrestaurant. Inspirert av sine mange m\u00e5ltider hos kokker som Alexandre Dumaine i Saulieu, Fernand Point i Vienne eller Andr\u00e9 Pic i Valence<\/a> bar Thuilier p\u00e5 en dr\u00f8m om \u00e5 kunne etablere et sted som kunne tiltrekke seg rike, vellykkede mennesker for noen avslappende dager godt inne p\u00e5 det provencalske innlandet.<\/p>\n\n\n\n
