Det blir noen ord herfra om lansering av Michelin-guider. P\u00e5 mandag 27\/1 var det lansering av den franske guiden, og f\u00f8rstkommende mandag er det lansering av den nordiske. Jeg gidder ikke komme med de store sp\u00e5dommene om hva som skjer, men noen betraktinger b\u00e5de i Frankrike og Norge har jeg uansett lyst til \u00e5 komme med. \u00a0<\/p>\n\n\n\n
Vi begynner i Frankrike. Allerede en dr\u00f8y uke i forvegen ble den st\u00f8rste bomben sluppet, Paul Bocuse<\/a> ble degradert. Siden 1965 har restauranten hatt tre stjerner, men i 2020-guiden m\u00e5 den alts\u00e5 ta til takke med to. Paul Bocuse har v\u00e6rt n\u00e6rmest uangripelig, men da han d\u00f8de ble det plutselig mer usikkerhet rundt hva Michelin ville gj\u00f8re med restauranten. F\u00f8rste anledning var i 2019-guiden, men da gikk det alts\u00e5 bra. I \u00e5r holdt det imidlertid ikke lenger og Michelin trakk tilbake en av stjernene. Michelin kunne n\u00e6rmest ikke kommet med en endring som ville bli omtalt mer, og meningene har v\u00e6rt mange. Det er n\u00e5 bare Michel Gu\u00e9rard<\/a> igjen av de gamle nouvelle cuisine-restaurantene som har tre stjerner. Jeg regner da ikke med Troisgros, da dagens kj\u00f8kken er der har gjennomg\u00e5tt \u00a0total endring under Michel Troisgros (og senere ogs\u00e5 med s\u00f8nnen C\u00e9sar).<\/p>\n\n\n\n
